Recipe: Honey Bunches of Oats Baked Chicken

It’s no secret that my husband loves to cook!  I’m thankful for that because I’m only good at baking ;) !  Here’s one of his favorite recipes.  He usually uses Rice Krispies but since I got such a good deal on Honey Bunches of Oats cereal recently he decided to use that this last time…and it was DE-LISH!!  So, I decided to share this recipe with you!

Honey Bunches of Oats Baked Chicken Recipe:

 

Ingredients:

  • 1/4 cup butter or margarine (melted)
  • 4 cups crushed Honey Bunches of Oats (or a similar cereal would do)
  • 4 boneless, skinless chicken breasts (split if needed)
  • Salt and Pepper (for a little extra flavor)

Follow these simple instruction:

  • Dip chicken in melted butter or you can brush it on
  • Roll chicken in the crushed cereal and coat it well
  • Lay chicken in shallow baking dish (he lays non-stick alum. foil in the bottom of the pan for easy cleanup)
  • Sprinkle the remaining crushed cereal on the top and/or sides of the chicken
  • Bake at 450 degrees for 35-40 minutes or until thoroughly cooked
  • ENJOY!

My sister told me about a recipe she found for Chocolate Muffins using only 2 ingredients…Chocolate Cake Mix and Canned Pumpkin!!!  No oil or eggs are needed and I will tell you that after these little muffins come out of the oven, they are pure chocolatey goodness and you won’t taste the pumpkin…or at least I didn’t!  I like the thickness and texture of these muffins because they come out a little dense, sorta like a cakey brownie!

I mentioned this the other day on my Facebook Page and I promised a recipe so here it is. 

  1. 1 - Devils Food Chocolate Cake Mix (other flavors can be used too)
  2. 1 - 15 oz. Canned Pumpkin

Directions:

Mix Cake Mix and Canned Pumpkin together (very thick batter, so it takes alot of mixing).  Use a spoon or even an ice cream scoop to pour mixture into 12 Cupcake Paper Cups.  Bake at temperature the Cake Mix calls for for around 19-22 minutes.  Use a toothpick to see if muffins are done…if not, put back in the oven for another minute or 2!

Homemade Bisquick Substitute Recipe

My husband finally mastered the art of making homemade Breakfast Gravy and so now he’s constantly making homemade biscuits!!  We’re forever running out of Bisquick and so when I found this recipe, I just had to share it with you.  I haven’t tried it yet, but I think it’ll be a nice project for my husband this coming weekend (since we’re already out of Bisquick)!! 

Check out this Homemade Bisquick Substitute Recipe!  The only ingredients you’ll need are:  all purpose flour (sifted), baking powder, salt, and butter!

I’m sure that you all have read over and over about how much I LOVE Mocha Frappe’s from McDonald’s.  I’m a big addict and I don’t even like coffee…well, that was until I had one of these!  I have used up my stash of FREE Mocha Frappe coupons…some which were given to me (thanks, Mandi) and I just can’t stand paying over $2.00 for a small one. 

I decided to give the World Wide Web a try at finding a recipe that was similar to the McDonald’s Mocha Frappe.  The very first recipe I attempted was a complete SUCCESS!!  It’s very quick and easy to make and you can change the recipe around to your liking.  I mean, you can’t hardly mess up when it comes to coffee, milk, chocolate syrup, sugar, and ice right??!!

So below you’ll find a recipe that I found online through a Yahoo Answers submission.  You can find the recipe here or just keep reading below.

 

HomeMade Mocha Frappe Ingredients:

  • 1 1/2 cups Cold Coffee
  • 2 Cups Milk
  • 1/4 Cup Chocolate Syrup
  • 1/4 Cup Sugar

 

Directions:

  • Freeze the coffee in ice cube trays.  Blend everything until smooth and enjoy!!  Yes, really…that’s all there is to it!  Make sure to look below for variations!!

 

Variations:

1.  Okay, first off I don’t have to have the pretty cool whip and chocolate syrup drizzle on top.  If you are preparing these for a party or something of that nature then I probably would add that just for “prettiness” sake. 

2.  I don’t have a blender.  I have a Smoothie Maker.  The difference is that the blades aren’t really meant for blending ice, so I had to use a food processor to chop up the coffee ice cubes into smaller pieces. 

3.  I didn’t use 2 cups of milk…I only used 1 1/2 cups.  I liked that thickness but you can taste it yourself and see if you’d rather add the extra milk.

4.  I didn’t measure the chocolate syrup…eeeek.  I just squirted it in.  Also, I’m not sure that I used all of the sugar that the recipe calls for.  I just scooped some out and dumped it in.

5.  If you prefer Caramel over Mocha, then add Caramel Syrup or Topping.  Also, if you just prefer an icey coffee just add the coffee without any of the other flavorings.

Now, as you can tell I didn’t follow this recipe to a T.  Most times I measure everything when cooking.  I think I was just too impatient to measure plus the fact that because of my 4 year old, I have NO IDEA where any of my measuring cups are!!!!!  You won’t want to blend the ice too, too much if you like it really icey.  This recipe is totally customizable and you can omit or add anything I think to your liking.

Today I wanted to share a couple of recipes with you that I found.  Most of the ingredients are things that you may already have stocked in your kitchen.  Hopefully, the other ingredients that you have to buy you can find with a good sale. 

Since pork chops have been on sale at Kroger and Jay-C, I thought most people would be ready to throw them on a grill so I found this really cool recipe for Grilled Cuban Pork Chops.  If you like to cook then you probably have these ingredients already.  It calls for:   pork chops, grated lime peel, cumin seed or ground cumin, cracked black pepper, salt, oil, and garlic.

This next recipe is for the Peanut Butter Rocky Road Brownies….did you just gain 5 pounds??  Oh, goodness.  I hear angels sing when brownies are mixed with peanut butter!!  For those of you who don’t know me, my family can tell you that I have a HUGE sweet tooth and am most definitely a “carb-aholic”.  So, this recipe will be tried out by yours truly!  Most of the ingredients are things that most households consider “staples” so you shouldn’t have to shop for much of it if any.

Today is Tuesday and that means Tasteful Tuesday here at Sweet Pennies from Heaven!  Tuesday is the day that I like to share some fun and creative recipes using items that have been bought on sale {with coupons} in the last couple of weeks!  When you start shopping SMART you’ll notice that your shelves begin filling up and you want to make sure that you’re using all these foods before they expire or go stale!!!

This first recipe is something that just sounded interesting to me and I’m always up for trying new *sweets*!!  Check out this recipe for Irish Potato Chocolate Cake.  **Note that the author added a quick tip on using regular sugar in place of the fine sugar.  You’ll have to scroll all the way down to find that.  I can’t wait to try this recipe!!!  

This photo is just one I found of chocolate potato cake.  It isn’t from this recipe but I just wanted to give you an idea of what it would look like.  This one was baked in a bundt pan and also has powdered sugar on top instead of chocolate frosting.

This Pillsbury Chicken Bacon Quesadillas recipe looks so yummy!  This is actually a recipe from one of the Pillsbury Bake Off Contestants.  We love to make quesadillas here at our house so we’ll be trying these soon (hopefully this week)!

Today is Tuesday.  That means Tasteful Tuesday!  This is a weekly series where I like to share recipes with you.  Preferably recipes that use foods that we’ve just bought on sale within the last week or so.  My niece Shelbi shared a website with me that had alot of different but easy recipes that everyone can make!  Thanks Shelbi.

Today, I’m going to share 3 different recipes with you from that website.  You can check out Jadi’s Favorite Recipes and see more great ones.  I’ll probably be sharing more of these as I liked alot of her recipes. 

The first recipe is Parmesan Chicken.  She uses Ritz Crackers as her breading and I am sure most of you got 2 boxes of Ritz crackers FREE this past week at Kroger when you bought Coke products!  Check out her Parmesan Chicken Recipe here.  I can’t wait to try it out myself!!

 

The 2nd recipe I wanted to share is the Chicken Salad Sandwich!!  Oh my, these make my mouth water!!  They look so delicious and I love chicken salad especially on croissants…yum!  These would be perfect for any occasion.  Check out Jadi’s Chicken Salad Sandwich Recipe here.  These will be first on my list to make.

 

The last recipe I wanted to share today is the Apple Dumplings.  Pillsbury Crescent Rolls have been on sale off and on for weeks!  How many of you have a few of these in your fridge??  Well, maybe you can try this recipe for the Apple Dumpling!  My sister and I always have to get one of the Apple Dumplings from Cracker Barrel, so I’m excited to try this sweet treat!

TASTEFUL Tuesday 4/27 – Thrifty Recipes

Today is Tuesday and that means Tasteful Tuesday!  If you’d like to find recipes using some of the foods that you’ve bought on sale this past week or so then check out the recipes below!  The foods that I’m using in these recipes that were bought on sale and with coupons are Sausage, Pillsbury Biscuits, Frozen Vegetables, Cake Mix, and Campbells Soup.  If you know of a great thrifty recipe, we’d love to hear them!!

I am not, nor have I ever claimed to be a “good cook”.  Now, I love to bake…hahaha.  Preferably sweets!  I do love recipes though and am always excited to try new ones!  I fully rely on a few family members who are great cooks.  Thanks Bekki and Kathleen for these recipes below!

Sausage Balls:

Ingedients:

1 lb. roll of Sausage
2 cups Bisquick (best not to substitute with generic)
1 10 oz. pack of Shredded Cheddar Cheese

Directions:

  • Mix these 3 ingredients together in a large bowl.  You’ll probably need to get your hands dirty!!
  • Roll into balls about 1 and 1/2 inches in diameter
  • Place them on a baking sheet and bake for apprx. 20 minutes at 350 degrees.  Cook thoroughly, until sausage in center is done.

Quick Chicken Pot Pie:

Ingredients:

2 cups cooked chicken breast (or canned chicken)
1 or 2 bags of frozen mixed vegetables (depends on if you like alot or a little veggies)
1 can cream of chicken soup
1 cup chicken broth
salt and pepper to taste
1 can Pillsbury Biscuits

Directions:

Add all of these ingredients except the biscuits to a large pot.  Cook on high till it reaches a boil, then turn heat down and cook on low until veggies are almost tender.  You may need to add a little water to thin out the soup to your liking.
Once the vegetables are almost tender, place the soup into a large baking dish and cover with the Pillsbury Biscuits.  Place in oven at the temperature the biscuit package calls for and bake until the biscuits are brown on top!

**We also have just baked the biscuits by themselves and ate them in addition to the soup.  We kinda like it that way too!!

Jello Poke Cake:

The first time I ever had this cake, I just thought it was the best thing ever created!!  My sister in law had made this for Easter one year when I was pregnant with our little boy.  I couldn’t stop eating it!!  Thanks Kathleen!

Ingredients:

1- box yellow or white cake mix
1 -3 oz. box of any color you like Jello
1- 8 oz. tub of Cool Whip
9×13 baking dish

Directions:

Bake cake according to package directions. While cake is cooling in its pan, poke holes all over with the handle of a wooden spoon or something similar. Mix jello according to package directions. Drizzle jello liquid over cake. Make sure jello penetrates all holes. Chill several hours or overnight. Frost chilled cake with whipped topping.

You’ll be surprised.  The cake isn’t wet like you’d think it would be.  It’s just very very moist!  It tastes best right out of the fridge when it’s cold!!  I really like how creative this cake below is!!  They used several different colors of jello!

TASTEFUL Tuesday: 4/20 – Thrifty Recipes

Today is Tuesday.  That means more recipes this week using some of the products that were on sale in the last week or so!!!  I don’t like the idea of buying things in bulk and then storing them in your pantry forever!!!  That’s why I decided to find recipes using items that were bought on sale so that those food items are being used!!  I have a few good recipes here today.  Check them out below!!  If you’d like to see more recipes, then check out my other Tasteful Tuesday posts

 This is a Paula Deen Recipe from the Food Network!!  I LOVE her!  The items that were on sale in this recipe were the Whole Chicken Roaster and the Uncle Ben’s Rice!  You can add or omit any of the ingredients to your liking.  That’s the fun part!

Chicken and Rice Casserole

Ingredients:

2 (14 1/2-ounce) can green beans, drained and rinsed
3 cups diced cooked chicken
1 medium onion, diced and sauteed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) can pimentos, drained
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
1 (6-ounce) box long-grain and wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt

Directions:
Preheat oven to 350 degrees F.  Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

This recipe is Super Cute!!!  I call it “I Heart Breakfast”…hahaha.  This is a recipe from Incredible Egg.  I found it on Facebook!!

INGREDIENTS:
2 slices white OR whole wheat bread
2 tsp. olive oil
2 EGGS
Salt and pepper

HERE’S HOW:
1) Cut out center of each bread slice, using a 2-1/2 to 3-inch heart, round or other shape cutter; reserve cut-outs. …
2) Coat large nonstick skillet lightly with oil. Toast bread slices and cut-outs on one side in skillet over medium-low heat until golden, about 5 minutes. Turn bread pieces over.
3) Break and slip an egg into center of each bread slice. Cover pan and cook slowly until whites are completely set and yolks begin to thicken but are not hard, 5 to 6 minutes.
4) Season eggs with salt and pepper. Serve immediately.

The following is a recipe for a Strawberry Smoothie.  I haven’t tried this, so if you make it let us know how yummy it was!!!  There has been some great sales on Strawberries and Yogurt the last couple of weeks!  Hopefully you got stocked up.  I’d recommend buying strawberries when they are at their rock bottom price (this happens in the summer) and freeze them.  You can make sweet treats all year long!

Thick Strawberry Smoothie

Ingredients:
6 large strawberries
1/2 cup of your favorite yogurt
1/2 cup of vanilla or strawberry ice cream
1/2 cup of whole milk

Directions:
First Blend strawberries and milk together until strawberries are well blended, then add ice cream and yogurt and whip for just a little bit so smoothie remains thick.  Also, add a pinch of sugar if the smoothie is too tart!
